The Story of Salzburger Nockerl

The shape of Salzburger Nockerl is no coincidence: the three fluffy peaks are said to represent Salzburg’s snow-covered hills – the Mönchsberg, Kapuzinerberg, and Gaisberg. According to legend, the dessert was created in the 17th century by Salome Alt, the companion of Prince-Archbishop Wolf Dietrich von Raitenau, as a “sweet temptation” to delight him.

Where to Enjoy Salzburger Nockerl

In Salzburg, several traditional restaurants and cafés serve this iconic dessert. It’s especially popular in places that offer classic Austrian cuisine, including:

  • Restaurant St. Peter Stiftskulinarium – One of the oldest restaurants in Europe, known for its fine dining.

  • Gasthof Goldgasse – Famous for its authentic preparation of local dishes.

  • Bärenwirt – A traditional restaurant serving hearty regional specialties.

  • Café Mozart – A classic Viennese-style coffeehouse experience in the heart of Salzburg.

  • Imlauer – A restaurant with panoramic views and creative cuisine.

  • Sternbräu – A traditional restaurant offering Austrian cuisine in a warm, rustic setting.

These Salzburg delicacies combine tradition and innovation in a truly unique way: The Original Salzburger Bosna features two grilled sausages in a crispy white bread roll, topped with mustard, onions, and curry powder – a local street food classic. The Salzburger Nockerl Macarons by Baltram Patisserie offer a fresh take on the city’s iconic dessert, blending French patisserie artistry with regional charm. Alpine caviar from the Grüll fish farm represents exclusive culinary craftsmanship, sourced from the crystal-clear waters of the Alps.
