Blaue Gans
The oldest inn in Salzburg – since 1350. The founding family Aufner traded silver to Venice and brought back what was hardly known in Salzburg at that time: citrus fruits, capers, olive oil, anchovies, spices. An early form of fusion cuisine, long before this term existed. This history shapes the cuisine to this day. Seasonal, artisanal, looking beyond the plate. In the in-house food manufactory, smoking, pickling, and fermenting takes place.
